Vegan milk soup

I think that a summer isn´t perfect without this filling fresh milky veggie soup. You can use everything you can find growing seasonally in your garden as most of the fresh vegetable-herb combinations taste great in that dish. Another great thing is that you can eat the soup cold or warm. It´s up to you. And it usually tastes even more delicious on the next day.

Raw buckwheat with smoked tofu and fresh beans

Raw buckwheat can be tricky to work with as it becomes gluey quite quickly if boiled for too long or in too much water but if you follow this recipe it´s hard to fail. Crunchy smoked tofu and buckwheat are one of the best combinations in my opinion and the cool thing is that it can be eaten either warm or cold as a salad.

Easy vegan spelt-bread (sugar free)

Ancient grains spelt, einkorn and emmer have more nutrients in it and are supposedly easier to digest than modern “over bred modern grains.  Common wheat varieties are bred to have large grains and they need more fertilizers for growing. Due to that those varieties are genetically less diverse and prone to plant diseases.  Ancient varieties can grow in less fertile soils and demand less fertilizers.
