I make similar healthy snacks with variating ingredients every now and then to take with me if I know that I might be stuck doing physical work like gardening or building or hiking for a whole day. Quite often the time flies and I do skip meals and remember food when I´m already super hungry.
I´d like to believe that everybody likes eating falafels regardless of which kind of diet they follow. At least I haven´t met anyone who doesn´t, have you?
Raw buckwheat can be tricky to work with as it becomes gluey quite quickly if boiled for too long or in too much water but if you follow this recipe it´s hard to fail. It´s a joy to combine all sorts of freshly picked greens into a delicious salad. Magenta goosefoot tastes a bit like spinach and adds hints of bright purple to the mix. And there are so many interesting and colourful varieties of lettuce out there. Sauer almond sauce definately adds that final filling taste to it.
Since I tried smoked tofu the first time I almost can´t live without it now. It´s irreplaceable ingredient that can be used cooked or raw and if it´s chopped up quite small and fryed with a bit of oil and soy sauce it tastes like meat as some omnis have told me. I realized that I have walked past this bright coloured huge mushroom 100 times without knowing it´s edible. Chicken-of-the-woods (Laetiporus sulphureus) grows everywhere, mostly on old or almost dead oak, aspen or white willow trees in spring and summertime.
