Vegan milk soup

I think that a summer isn´t perfect without this filling fresh milky veggie soup. You can use everything you can find growing seasonally in your garden as most of the fresh vegetable-herb combinations taste great in that dish. Another great thing is that you can eat the soup cold or warm. It´s up to you. And it usually tastes even more delicious on the next day.

Ingredients:

For 2-3

Time: 20-30 min

1 L Oatly oatmilk or some other vegan milk without sugar

125 ml Oatly cream oat

3 middle size carrots( potatoes, french beans etc)

1,5 tsp salt

pinch of black pepper

15 pods green peas( ca 100 g)

handful of parsley

handful of dill

a bit of basil

handful of spring onions

1 tsp nutritional yeast flakes

How to make?

  1. Chop carrots(and potatoes, french beans etc) and green onions.

  2. Pour the milk into the pot and add carrots (and potatoes, french beans etc) and green onions. Simmer for 10-15 min.

  3. Chop up the spices and add to the pot. Also add salt and pepper.

  4. Take the pot away from the heat and add vegan cream (Oatly cream oat) and yeast flakes.
