Meadowsweet-blueberry ice cream

Sweet meadowsweet blossoms don´t only attract pollinators but the one´s who have sweet tooth too. I´ve used those sweet blossoms in various desserts and bakes to reduce the amount of sugar and give them an interesting flowery flavour.

Ecospruce(ecospruce.ee) produces this really fine meadowsweet powder that can be used in juices, smoothies and in other dishes you one can come up with.

Ingredients:

1 tsp fresh meadowsweet blossoms or 2 tsp meadowseet powder

4 frozen overripe bananas

1 handful of blueberries

How to make?

  1. Freeze the bananas for 24 hours and then take them out and let defrost for couple of minutes in room temperature.

  2. Combine all the ingredients in blender.

  3. Serve immediately!
